Winter Warmer Recipe: Chicken & Mushroom Pie (Cheat’s Version)

Ingredients

(Serves 4–6)
- 2 cups cooked, shredded chicken (leftovers work perfectly)
- 1 cup sliced mushrooms
- 1 onion, chopped
- 1 cup cream, white sauce, or tinned cream of chicken soup
- 1 roll of ready-made puff pastry
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- 1 egg (for brushing – optional)
Method
- Preheat your oven to 200°C (or 180°C fan-assisted).
- In a pan, heat the olive oil and sauté the onion and mushrooms until golden and soft.
- Add the chicken and stir through. Pour in the cream or white sauce and mix until well combined. Season to taste with salt and pepper.
- Spoon the mixture into a greased baking dish.
- Roll out the puff pastry and place it over the filling, pressing down the edges to seal. Cut a small slit in the top for steam to escape.
- Brush the pastry with beaten egg for a golden finish (optional).
- Bake for 25–30 minutes, or until the pastry is puffed and golden brown in colour.
